I bought a chilli sauce from Rapid Creek markets today and thought it was about time I started to rate what was around for Darwin chilli lovers to purchase from either the markets or your local Coles or Woolies store. I am not talking about boutique stuff like Dave's Insanity Sauce which you can buy from http://www.fireworksfoods.com.au/Web/index.html along with a range of other backside burning broth... Just the stuff you grab off the shelf thinking "I'll give that one a go".

I have simplified the rating system and will only do one or two at a time. My rating scale is simply P3.

P3 stands for Pain, Pleasure, Price... The pain is the chilli heat, the pleasure is the taste/flavour and the price is self explanatory.

Rather than a 1 to 10 scale which is hard for me as I can't count that far, I have opted for a - 0 + scale which is simple... minus - doesn't cut it. 0 means it is okay and + means that it is worth a try. Anything that really rocks my socks will be rated as such.

Every owns their own taste buds so I am not going to describe flavour... For those who don't eat chilli they probably think that our taste buds were destroyed years ago. On occaision after having a worthy chilli sauce I too think I may have done some damage... Yet we come back for more.

Now to the market chilli.

Lingham's SriRacha Extra Hot Chilli sauce

Ingredients

Chilli, Water, Garlic, Sugar, Salt, Vinegar, Acetic acid. Lactic Acid and Thickener (415)

I threw the box away but it will be similar to the Lingham's chilli.

I have bought this more than once, an Indian tabasco style but definately not a McIlhenney flavour.

If any of you know who makes a great chilli sauce around Darwin, please let me know. It tends to be the lovely aunties who have their basic recipe yet they all taste a little different. My recommendation out of these three? Definately the Rapid Creek Market chilli sauce. The kafir lime leaf zest and the onion made all the difference.
