I have created a number of chilli sauce blends and this one tastes really good and is so simple it is embarressing.
The ingredients
1/2 kilo of fresh chilli destemmed and washed only (the more varieties, the better the taste habaneros, birds eye, tabasco, jalepeno, cayenne)
6 Darwin limes (because we live in Darwin - but any really juicy lime will do)
1 knob of garlic (wards off vampires, flu and tastes great with chilli)
1 chinese spoon (refer to photo if you haven't seen one of these sppons) ground black pepper (Just gives a different little bite)
1 chinese spoon of dried chilli flakes (Just the chilli flakes you get from your local Asian grocery or emporium)
1 chinese spoon of sugar
1 chinese spoon of salt (I use ground sea salt)
1/4 cup vinegar (I use mizkan japanese vinegar but you can use any white vinegar)
1 tin of whole tomato (800g)

method
blend the lot in a big blender (just fits) and bottle. Heat rating is about a 6 depending on chilli type. Great on anything except chocolate and icecream (unless it is deep fried icecream)
